A Chocolate Lover's Dream....

I am really not a huge fan of chocolate, unless it comes in the form of Sycamore ice cream or brownies. Some friends of ours have been watching Rease on Monday nights, while we go to our Total Money Makeover small group at church, so I decided to treat them to dinner this week (Since they won't accept any payment...). I made stuffed shells with spinach and broccoli (spinach was a nice addition to the filling), beef house rolls and some super wonderful brownies. Here is the recipe in case you are craving some chocolate too.

The Best Fudge Brownies Ever **
1 C. butter
2 1/4 C. sugar
1 1/4 C. Dutch process cocoa
1/2 tsp salt (up to 1tsp if you use unsalted butter)
1 tsp baking powder
1 Tbsp vanilla
4 large eggs
1 1/2 C unbleached, all-purpose flour
2 C. chocolate chips

-Preheat oven to 350 and grease a 9x13 pan
-In a saucepan, melt the butter and then add the sugar and stir to combine. Return mixture to the heat briefly, just till it's hot, but not bubbling; it will become shiny looking as you stir it. Heating the butter and sugar a second time will dissolve more of the sugar, which will yield a shiny top crust on the brownies. Transfer mixture to a mixing bowl.
-Stir in the cocoa, salt, baking powder, and vanilla. Add the eggs, beating until smooth. Then, add the flour and chips, beating until well combined. Spoon the batter into the prepared pan.
-Bake brownies for 28-30 minutes, until toothpick inserted in center comes out clean (might have a few crumbs, but i am sure you all know how to tell when brownies are done...)
-Cool completely before cutting (I have it on good authority you don't want to cut them when they are still warm...they just ooze everywhere, unless of course you are adding it to ice cream or something that just goes great with a warm, gooey brownie!).

**I didn't name them "The Best Fudge Brownies Ever", King Arthur Flour did; but, I would definitely agree they are worthy of the title.

Two Months...

We can't believe Rease is two months old! Time goes so fast! She is growing by leaps and bounds, weighing in at 12 pounds 9 ounces and 24 inches long. We got her two month shots on Tuesday and she did a great job. She didn't really fuss at all until the last one. Even then, she only cried for about 30 seconds or so.

Rease is starting to figure out what her arms and legs are and they she can move them however she wants. She starts kicking her legs everywhere when she gets excited, it is so cute.

Found Ryan....

Abrah left a comment on my 4th of July post asking where Ryan was. I found him. The pictures below were on Chris' camera so I missed them on the first 4th of July post.

Friday night was the first night we put Rease in her crib. It went surprisingly well. It took me about an hour to get her to fall asleep in the crib, but once she was asleep she slept wonderfully. I was actually surprised how much better I slept with her in her crib. I thought I would keep waking up wondering if she was okay. I don't know if I was just tired or what, but I didn't wake up until it was time to feed her. Last night I even took the bassinet down in our room and packed it up. She is growing up too fast!

I am laid of this week and next and super excited about it. I am very happy to have two more weeks to spend with Rease before I go back to work for good. **Eventhough I am laid off a week in August and October, then comes Thanksgiving and Christmas.....so I will have lots of little breaks to spend with her!!!

And I have a confession to make...we will be buying another car. Go ahead and laugh and mock
me. Lol. When we recently bought the new Mariner, I promised everyone we weren't going to be buying another car for quite some time. Well, it turns out "quite some time" is about 5 weeks. We started Dave Ramsey's "Total Money Makeover" and in doing so Chris decided it was time to let go of the GTO. So....we recently sold the pick up and the GTO and now Chris has nothing to drive. So in the near future we will be buying something in CASH for Chris to drive. It probably won't quite be the trashed beater Dave recommends that you buy, Chris has a little too much of a love for cars to do that, but it will be one less payment we have every month while we pay off all of our debt and work to become debt free. If you haven't read the book, I recommend you do it and maybe you will be motivated to become debt free too.

Back to Work & Catching Up with Pictures

I started back to work on Monday....it stinks, plain and simple. Leaving Rease hasn't been as hard as I anticipated, but she is also staying home with Grandma Corwin this week. I am laid off the next two weeks, so she is spending some time at home before she goes to day care in August. It is still hard, it would be great if I could be at home with her all day long, but I can't.

One other thing that stinks about work is having to wear shoes! I haven't had socks and shoes on since May 10th!!! (Except for maybe one or two walks here and there). Mom and Dad will testify to the fact that I cannot stand to have things on my feet. As a child I used to always pull off my shoes and socks and say "My feets are hot". Maybe Rease will get that trait, who knows. So adjusting to sitting at my desk all day, missing my baby, staring at spreadsheets, with feet that wish they were in flip flops is torture.

Rease is smiling a bunch more now and cooing like crazy. She wakes up so happy in the mornings and just lays on her changing pad smiling and talking to you incessintly. I love it. She had a weight check at the doctor on the 2nd and was 11 pounds 15 ounces at 7.5 weeks old. I think she is doing just fine as far as the weight goes! Next week we have to get her 2 month shots and her two month check up. We are very excited to see how long she is!
