I made these muffins yesterday because I had a bunch of going-bad bananas and found the recipe online. Pretty healthy and yummy too.
Banana Bran Muffins
1 1/2 C. wheat bran
1 C. buttermilk
1 1/2 C. mashed bananas
2/3 C. brown sugar
1/4 C. vegetable oil
1 1/2 C. whole wheat flour
1 1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
soak bran in the buttermilk for about 15 minutes.
mix bananas, sugar, eggs, oil, and bran.
add dry ingredients.
bake 350 for about 20-25 minutes.
makes about 15 muffins.
**make your own buttermilk by using 1 C. milk and adding 1 Tablespoon of vinegar. Let it sit at
room temp for about 15 minutes.....**
